Sweet beans pie recipe
A sweet, colourful mash pie, made from herbs, sweet potatoes, mixed beans, cheese, and every good thing.
For a vegan version, leave out the cheese, dot the top with vegan margarine, and bake without foil for 35–40 minutes.
Ingredients
- 1 kg sweet potatoes
- 25 g butter or margarine
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 1 410g tin chopped tomatoes with juice
- 200 ml vegetable stock
- 0.5 tsp dried thyme
- 1 tsp yeast extract
- 1 tsp soy sauce
- 2 cans of mixed beans of your choice such as kidney beans, butter beans or baked beans (410g each)
- 50 g grated cheese

Step-by-step
- Prick the sweet potatoes and roast them in their skins for 30 minutes or until soft. Allow to cool, peel, and mash with the butter/margarine. Put to one side.
- Heat the olive oil in a saucepan and gently fry the onion for about 5 minutes until soft.
- Add the stock with the tomatoes, herbs, yeast extract and soy sauce and stir. Bring to the boil, turn down the heat and simmer for 15 minutes. Stir in the beans.
- Pour the tomato and bean mix into a casserole dish and place the sweet potato mash over the top. Sprinkle the cheese over the top and cover in foil. Bake for 30 minutes. Remove foil and bake for a further 15 minutes. Allow to cool for 5 minutes before serving.
