Poached egg recipe
It's one of those things that everyone sort of freaks out about but it's incredibly simple, the main thing is having really good fresh eggs.

- 1 drop of white wine vinegar
- 1 pinch Salt
- 1 pinch Pepper

Step-by-step
- Check your egg is fresh by dropping it in a bowl of water. If it floats it is not fresh and will not be great fro poaching
- Break your egg into a bowl
- Add a drop of white wine vinegar to a saucepan of water and bring to a boil then turn down the heat so that the water is just below a simmer
- Pour the egg into the water in one quick motion
- Cook for 3-4 minutes, checking it after about 2½ minutes
- Remove the egg from the saucepan and dry slightly on kitchen paper
- Season with salt and pepper
