Ultimate Boozy Onion and Three Cheese Toastie

This cheese toasty takes leftover cheeses, an onion and a slug of booze, and transforms it into the food of the Gods! The caramalised onions are well worth making a batch of too, they're great for French onion soup for example.

Step-by-step

  1. Melt a good knob of butter gently in a pan then add the onions plus a little salt and pepper. Mix well to combine then put a lid on (leaving a small gap at the side) and let the onions cook very gently, until they are very soft, golden and not too wet.
  2. This will take about an hour, so you may want to make a big batch; they're good in sandwiches, pies etc.
  3. When the onions have reached this stage, turn up the heat and slosh in your beer and Worcestershire sauce. Let it bubble furiously until it is almost all gone.
  4. Preheat your sandwich toaster. Spread the butter on both pieces of bread, taking care to get good even coverage and place one, butter side down on the toaster.
  5. Add your cheeses on top, then follow with a layer of the onions. Place the other slice of bread on top, butter side up. Toast to your liking and enjoy.
