Spinach and nutmeg muffins recipe
For some people a savoury snack goes down well at teatime. This is a really simple recipe for savoury spinach muffins. Try them with a refreshing cup of tea!
Ingredients
- 150 g Self raising flour
- 150 g Plain flour
- 2 tsp Baking powder
- 150 g Mature cheddar cheese, grated
- 0.5 tsp Salt
- 0.5 tsp Cracked black pepper
- 2 Eggs
- 250 ml Milk
- 150 g Cooked and chopped spinach
- 0.5 Nutmeg, freshly grated
- 3 Spring onions chopped

Step-by-step
- Pre-heat the oven to 180°C.
- Sieve the flour and baking powder on to the cheese with the salt and pepper.
- In a separate bowl, beat the eggs and the milk together and add to the cheese mixture and fold together.
- Now add the spinach, spring onions and nutmeg and stir to combine thoroughly.
- Divide the mixture evenly into a muffin or cup cake tray to make eight muffins and bake in the oven for 20 minutes.
- These muffins make a great savoury teatime treat served warm straight from the oven.
