Step-by-step

  1. Season the raw cod fillets with a sprinkle of salt and pepper, then place on baking tray and put into a pre-heated oven at 180°C/350°F/gas mark 4, for around 15 minutes
  2. Finely dice the onion before frying off in some olive oil. Sprinkle with caster sugar and wait a minute for it to caramelise
  3. Add the tomatoes and soy sauce to the pan and sprinkle with thyme before mixing everything together, leaving to cook for two minutes
  4. Remove the cod from the oven and cover in the warm tomato and thyme dressing
