Edd Kimber's peanut butter and banana quesadillas recipe
Simple dessert quesadillas. While the recipe calls for the use of a barbecue, you could make these in a shallow pan on the hob or a baking dish in the oven.
Ingredients
- 4 flour tortillas
- 15 g unsalted butter, melted
- 4 tsp light brown sugar
- 1 sprinkle ground cinnamon
- 100 g peanut butter
- 2 large bananas, sliced
- 40 g dark or milk chocolate, chopped
- 20 g marshmallows

Step-by-step
- Brush one side of each tortilla with melted butter and sprinkle with the sugar and a little ground cinnamon.
- Spread peanut butter over one half of each tortilla and top with sliced banana, dark chocolate and marshmallows. Fold over the other half of the tortilla and press to seal.
- Cook the quesadillas on the barbecue for about 2 minutes, each side, until gooey and toasted. Remove from the heat and cut into wedges to serve.
