Basic burger buns recipe
"When making these burger buns, I recommend using a food processor or mixer with a dough hook, which helps aerate the mix better and gives a more satisfying result. But preparing by hand is fine, too."
To make a cheese version, add 175g grated cheddar cheese to the recipe when adding the butter. Why not also consider decorating the buns with poppy, sesame or pumpkin seeds? Just sprinkle them on before you brush them with the egg and milk glaze.

Step-by-step
- Sift the flour, salt and sugar into a large bowl.
- Add the butter (and cheese, if using) and blend well together.
- Place the yeast in a small bowl, add 365ml of water and leave the liquid to become bubbly, which takes about 10–15 minutes.
- Add the yeast liquid to the flour and beat well for 7–8 minutes to amalgamate the dough. Cover the dough with a warm damp tea towel (dish towel) and place in a warm area for 1 hour to prove.
- Lightly grease a large baking tray. Divide the dough into 8 large balls or buns. Arrange the buns spaced well apart to allow for expansion as they cook; if using, sprinkle the sesame seeds over the surface of the buns.
- Cover again with the damp tea towel (dish towel), allow to prove again for 45 minutes. Meanwhile, preheat the oven to 220ºC/425°F/gas mark 7. Brush the top of each bun with the egg and milk glaze and place in the oven for 30–35 minutes.
- Remove the buns from the oven and leave to rest for 20 minutes before using.
