Candied olives and cherries in sweet sherry wine recipe

Candied cherries with the unusual addition of olives and a dash of sweet sherry wine.

- 50 g pitted black olives
- 100 g cherries
- 200 g caster sugar
- 200 ml water
- 200 ml sweet sherry wine
- 1.8 oz pitted black olives

Step-by-step
- Place a small saucepan over a high heat and add the sugar, water and olives. Let it all form a syrup and reduce down to a golden caramel.
- At this point add the glass of sweet sherry and the pitted cherries and let it all boil together for an extra 5 minutes. This will keep in a tight container for more than a month.
