Those lovely folk at Quintessentially Wine have very kindly given us a bottle of Vieux Télégraphe 2006 Châteauneuf-du-Pape [£25], which you can sip as you flick through the other prize, a copy of William Curley’s fantastic Couture Chocolate book. 

The Wine

One of the most iconic Domaines in the region, Vieux Télégraphe is a brilliant wine and one that Quintessentially Wine are incredibly excited about adding to their portfolio.  Drinking perfectly already, this 2006 is a beauty, with pastrami and pepper on the nose and masses of dense black fruit on the palate.  The tannins are calm and refreshing so you do not need to cook up a storm for this wine – simplicity is best!

The book

In this beautifully written book, the UK’s premier chocolatier William Curley, presents the ultimate master-class for all things chocolate. Couture Chocolate first examines the origins of one of the world’s most popular foods, explaining the method of creating chocolate, how its quality depends to a large extent on the variety of bean used, as well as the differences between plain, milk and white. It reveals how some of today’s most popular flavours, such as vanilla and chilli, were those favoured by the Aztecs centuries ago.

Finally in the master-class section, William shares his techniques and most mouth-watering recipes.

Perfect pairing

Quintessentially Wine and William recommend pairing Vieux Télégraphe with a sea salt caramel. Sea Salt Caramels are one of William Curley's most popular chocolates and have been awarded Gold on numerous occasions by the Academy of Chocolate. A light, liquid caramel made with the finest French butter, the hint of sea salt perfectly complements the sweet amber caramel. Coated with Amedei's Toscano 70% chocolate to complement and enhance the flavours of the caramel.

Sweet and salty

The Sea Salt Caramel has a smooth milk chocolate outer shell which houses a gooey slightly salted caramel centre for melt in your mouth pleasure. In order to find a wine to pair for this we have to look for something that will compliment the salty undertones of this chocolate with spiced notes. We find this in 2006 Châteauneuf du Pape, Vieux Telegraphe from Southern Rhone. This beauty has predominately dark fruit flavours and a spiced nose, but the soft tannins work in harmony with the milk chocolate casing.
