Piñarita cocktail recipe

Inspired by drag celebrity Manila Luzon, this Piñarita cocktail combines the boozy, puckery taste of a classic Margarita, with the heady sweetness of pineapple. The result is a tropical-tasting drink that’s as refreshing as Manila’s presence on RuPaul's Drag Race.

The drag queen, television personality and recording artist is known for her love of pineapples, and her affinity for the fruit has resulted in some truly iconic outfits over the years. It was the obvious choice of ingredient when Greg Bailey and Alice Wood set out to pay homage to Manila in their book, DRAGTAILS: Fierce Cocktails Inspired by Drag Royalty.

As the name suggests, this 50-recipe strong illustrated cocktail book celebrates popular drag superstars by encapsulating their signature likes, looks, style and personalities in drink form.

If you like your cocktails strong, with a fruity kick, this is one to try.

Things to note:

If you don't have a cocktail shaker, use a mason jar with a lid, shake vigorously and pour through a fine mesh strainer to serve.

Swap the salt rim for a sugar one, if you prefer.

For a subtle, smoky undertone, substitute the tequila for an equal quantity of mezcal.

For US ingredients and measurements, use the drop-down menu and select 'Cups'.

  • 50 ml tequila
  • 50 pineapple juice
  • 25 ml triple sec
  • 25 ml lime juice
  • 1.8 fl oz tequila

  • 0.9 fl oz triple sec
  • 0.9 fl oz lime juice
  • 0.2 cup tequila
  • 50 pineapple juice
  • 0.1 cup triple sec
  • 0.1 cup lime juice
To serve:
  • 1 tbsp salt flakes
  • 1 lime wedge
  • 1 pineapple wedge
  • 1 tbsp salt flakes

  • 1 pineapple wedge

Step-by-step

  1. Tip the salt flakes onto a small, flat plate.
  2. Rub the outer edge of a tumbler or coupe glass with the lime wedge, squeezing the lime as you go.
  3. Place the glass upside down on the salt plate, twisting the glass to coat.
  4. Pour the tequila, pineapple juice, triple sec and lime juice into a cocktail shaker filled with plenty of ice, and shake vigorously for at least a minute (if you don’t have access to a cocktail shaker, see note above).
  5. Strain the cocktail into the prepared glass and garnish with a pineapple wedge, to serve.
