Dark chocolate steak marinade recipe
An unlikely combination, but you can believe us when we say this marinade works well with beef. Bitter dark chocolate, sweet brown sugar and a kick from cayenne pepper – this sauce has it all.
Ingredients
- 300 g minute steaks (we like field&flower)
- 15 g dark chocolate (we like Seed & Bean Wild & Organic 100% cocoa Ecuadorian Dark Chocolate)
- 325 ml boiling water
- 15 g dark brown sugar
- 1 pinch salt
- 1 pinch cayenne pepper
- 10.6 oz minute steaks (we like field&flower)

- 11.4 fl oz boiling water
- 0.5 oz dark brown sugar
- 1 pinch salt

Step-by-step
- Stir together the boiling water, chocolate, sugar, salt, and cayenne pepper until the chocolate is fully melted and the sugar/salt dissolved. Allow the marinade to cool.
- Put the steaks into a zip locked bag before adding the cooled marinade.
- Seal the bag, pressing out the air and refrigerate for 4 to 12 hours.
- Before cooking, remove the steak from the bag and bring to room temperature. You may need to blot the steak with a kitchen towel if it is very wet.
- Reduce the excess marinade in a pan.
- Heat a griddle pan on a high heat and cook the steak for 30 seconds on each side for rare (1 minute for well done).
- Let the steak rest for 5 minutes before drizzling the reduced marinade over to serve.
